"Cranberry Orange"

| 4 cup | Whole wheat or wheat-free flour |
| 1 tbsp | Baking powder |
| 2 tsp | Baking soda |
| 1 1/2 cup | Coarsely-chopped cranberries |
| 1/2 cup | Coarsely-chopped walnuts |
| 1 | Whole orange minced very fine |
| 1 1/4 cup | Unsweetened orange juice |
| 2/3 cup | liquid honey |
| 1/4 cup | canola oil or unsweetened applesauce |
| 2 | Large eggs or egg substitute |
| 1/2 cup | trail mix |
Directions: Preheat oven to 350°F. Mix together flour, baking powder and baking soda. Stir in chopped walnuts, if using. Chop cranberries and mince orange. Beat together juice, honey, oil or applesauce and eggs. Add fruit to liquid ingredients. Add liquid mixture into dry ingredients, stirring only until blended. Fill prepared muffin tins, the size of your choice and bake accordingly.
